Howdy! Have a recipe here from our resident youngster - the sweet, beautiful 4Martini!! *applause*

There once was a lass named Four Martini,
Who went to Nashville clad in a bikini,
She cooked for the stars,
She made great lemon bars,
And a hell of a stuffed zucchini!

zucchini....hmm...oops, sorry, minds in the gutter again....

Basil Shrimp with Feta and Orzo

1 regular-size foil oven bag
Cooking spray
1/2 cup uncooked orzo (rice-shaped pasta)
2 teaspoons olive oil, divided
1 cup diced tomato
3/4 cup sliced green onions
1/2 cup (2 ounces) crumbled feta cheese
1/2 teaspoon grated lemon rind
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
3/4 pound large shrimp, peeled and deveined
1/4 cup chopped fresh basil

Preheat oven to 450°.

Coat inside of oven bag with cooking spray. Place the bag on a large shallow baking pan.

Cook the pasta in boiling water 5 minutes; drain. Place the pasta in a large bowl. Stir in 1 teaspoon oil and next 7 ingredients (1 teaspoon oil through pepper). Place the orzo mixture in prepared oven bag. Combine shrimp and basil. Arrange shrimp mixture on orzo mixture. Fold edge of bag over to seal. Bake at 450° for 25 minutes or until the shrimp are done. Cut open bag with a sharp knife, and peel back the foil. Drizzle with 1 teaspon oil.

Sounds yummy! I love shrimp! Anyway, and here's the funny of the day:

A man and his wife are dining at a table in a plush restaurant, and the husband keeps staring at a drunken lady swigging her gin as she sits alone at a nearby table.

The wife asks, "Do you know her?"

"Yes," sighs the husband. "She's my ex-wife. She took to drinking right after we divorced seven years ago, and I hear she hasn't been sober since."

My goodness!" says the wife. "Who would think a person could go on celebrating that long?"

That rhyme inspired me.... I've never made lemon bars but here is a recipe for LEMON SUGAR SNAPS

3/4 cup softened butter
1 egg
1 pkg. 2 layer lemon cake mix
1 cup lemon cornmeal
2 Tbsp. finely shredded lemon peel
course or granulated sugar

Preheat oven to 375. Beat butter and egg w/ electric mixer on medium to high for 30 seconds. Gradually beat in cake mix until combined. Stir in cornmeal and lemon peel.

Roll into 1 inch balls (NO COMMENTS PLEASE!). Roll in sugar. Place on ungreased cookie sheet. Bake 9 - 10 minutes or until bottoms are lightly browned. Cool completely. Makes about 3 1/2 dozen.
