The shy, innocent, Amy has a recipe for us! *giggles*
Kung Pao Pork
Prep: 13 minutes Cook: 8 minutes
1/3 cup water
1/4 cup soy sauce
2 1/2 tablespoons sugar
1 tablespoon lemon juice
2 teaspoons cornstarch
1/4 teaspoon dried crushed red pepper
2 tablespoons peanut or vegetable oil
3/4 lb. lean boneless pork, cut into 1/2-inch cubes (I just use butterfly porkchops)
2 large cloves garlic, minced (I used the preminced stuff in the jar)
1 large sweet red pepper, cut into thin strips
1 small onion, cut into wedges
1/2 cup roasted peanuts or cashews
Hot cooked rice
Combine first 6 ingredients in a bowl, stirring with a whisk until blended; set aside.
Pour oil around top of preheated wok, coating sides, or in a large non-stick skillet; heat at medium-high (375) 1 minute. Add pork and garlic; stir-fry 3 minutes or until pork is lightly browned. Add pepper strips and onion; stir-fry 3 minutes or until vegetables are tender.
Stir in soy sauce mixture; cook, stirring constantly, 1 minute or until thickened. Stir in nuts. Serve over rice. Yield: 2 to 3 servings.
*Also, you can substitute this with chicken instead of pork.
