Howdy!! I hope everyone is doing well. It's crazy in my world that's why I've been updating so infrequently. First off, I just want to thank Di for keeping the FBB open even though she has so much going on. My prayers are with ya sweetie.
The wonderful Pia has a couple more recipes for us! Isn't she sweet? She even named the first one after me!! LMOO!!
Pia says: Ok, here are two favorites...my SIL makes #1 for me for my birthday every year...it is to DIE for!!!! #2 is one of my favorite recipes and the reason I bought a Kitchenaide Stand Mixer. I make about 30 pumkin rolls for friends and family at Christmas.

Lemon Lush
2 cups flour
1/2 pound (2 sticks) margarine or butter (Southerners use butter)
1/4 cup walnuts or pecans, chopped
8 ounces cream cheese (softened)
1 cup confectioners' sugar
8-ounce container Cool Whip, thawed and divided
2 3-ounce packages instant lemon pudding
3 cups milk
Additional nuts for garnish
Blend flour, butter and 1/4 cup nuts; press dough into 9-by-13-inch pan and bake 20 minutes at 350 degrees until light brown. Cool.
Mix softened cream cheese and powdered sugar. Fold in 1/2 of the container of Cool Whip. Spread on cooled crust. Mix the two packages of instant pudding mix with milk. Spread over cream cheese mixture. Chill, then cover with remaining Cool Whip and sprinkle with nuts.

Pumpkin Roll
2 eggs - beaten
1 cup sugar
2/3 cup canned pumpkin (not pumkin pie filling)
Sift together:
3/4 cup flour
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. baking soda
1/2 tsp. ginger
*Confectioner's sugar
Mix eggs, sugar, and pumpkin together. Add sifted dry ingredients. Bake 15 minutes at 375EF in a jelly roll pan that has been lined with greased wax paper. Remove from pan. Sift *confectioner's sugar onto a linen tea towel. Flip cake over onto sugared tea towel. Carefully roll up cake, removing wax paper as you go (see "Joy of Cooking" cookbook for detailed instructions). Allow to cool for one hour; unroll carefully and spread with filling (see below). Roll again and sprinkle with confectioner's sugar. (Tastes even better after refrigerating overnight.)
Filling
1 8-oz. pkg. cream cheese
4 tsp. softened magarine
1 cup confectioner's sugar
1 tsp. vanilla
Mix all ingredients together until smooth.
